Chiangmai is an ideal place to learn cooking in the idyllic settings surrounded by cool mountains. There are a number of professionally run cooking schools that offer courses ranging from a day to 5 days and more. Learn to cook the most famous Thai dishes like noodles, rice, curry pastes, salads (Yum in Thai), soups and desserts like mango sticky rice etc.Style of cooking varies regionally in Thailand. Generally Northern food is less spicier than central or southern food. Northeastern food is quite hot and spicy.
For a beginner a 5 day course is highly recommended. It teaches basic Thai recipes and the art of vegetable carving. Accommodation, transport and meals are usually included but check with the school for details.
The use of fresh ingredients and processing them into delicious Thai dishes is best learned in Thailand. For more experienced chefs this would be an exploratory insight into Thai cooking. This school was started in 1993 and is arguably the best place to learn Thai cooking from a person who has cooked all her life.
Classes are all in English and many foreigners had a good time here.
